Preparation and Ingredients: In order to prepare chicken biryani in our kitchen, we first cut the chicken into large pieces. Then, the chicken pieces are marinated with proper amount of salt, pepper, ginger garlic paste, turmeric powder, pure ghee, and hot spices like cumin, cloves and chillies. Other ingredients required are basmati rice, finely chopped onions, oil, water and saffron strands.
Cooking: Keep the marinated chicken pieces aside with a mixture of traditional spices for 30 minutes. Then, the oil is heated in a large curved pan where the onions are fried till they turn golden brown. Then, the marinated chicken is added and fried for a certain period of time. Once the marinated chicken is cooked about 50%, we add the preboiled basmati rice over it like a pulao. Add some water and cover the pan with a lid, keeping the airtight on a low gas flame for about 25 minutes until the rice is tender and water is absorbed.
Finishing Touch: The chicken biryani is fully cooked before individual portions are plated in small to medium-sized pots to keep each serving hot until eaten; finely chopped coriander leaves are sprinkled on top for added flavour, color and aroma; hot chicken biryani is served according to each order alongside classic condiments of raita (yoghourt sauce) and pickles to provide cooling contrast and cut the richness of the biryani, plating and serving the piping hot biryani fresh with accompaniments in this way aims to maximize the enjoyment of the experience for customers.
